The Chevallay Family
Serving food lovers in Haute-Savoie since 1923.

The Chevallay patisserie stood on the main street of Thonon and was already delighting many food lovers from 1923. Jules Chevallay, the great-grandfather, had bought the business of Mademoiselle Tardy's patisserie and, in doing so, became the holder of the patent for the invention of the Biscuit de Savoie, dating from 1789. (Let us acknowledge, however, that in that year, the French Revolution curiously generated far more discussion!).
Jules Chevallay passed on his expertise to his three sons so that René (known as "Zo"), his eldest son, took over the Thonon patisserie, while Henri created the famous Chevallay patisserie before the war, opposite the railway station in Annecy.
In Thonon, Zo worked in his patisserie until 1961 before passing the torch to his son Jean, who, having trained as a chef, transformed the establishment into a brasserie restaurant. The restaurant was later taken over by his son Bruno.
As for Léon, the third son, after opening his patisserie in Annemasse at the end of 1947, he founded the restaurant Le Central on rue Carnot in Annecy in 1955.
His son Alain Chevallay created Le Ramoneur Savoyard in 1990. He was joined in 2000 by his eldest son Florent. 13 years later, Alain and Florent decided to reinvent the establishment. And so the story continues…
